Fall is officially here!

It's here - it's here, Fall is officially here!

I'm sure some of you are experiencing the changing of the leaves, the slight chill in the air, the need for a warm cup of coffee or the sweet smell of baking cookies.  Here in California though, Fall teases us every morning with a cool breeze but it burns off in the heat of our 90 degree afternoons so we're not bundling up with our scarves just yet!

The changing of the seasons in central California is a sudden thing though, so we're prepping our favorite recipes, dusting off our baking pans and stocking up on all the fresh nuts and dried fruits delivering to our warehouse daily.  That morning when we go from having our air conditioners on to having frost on the front lawn I want to be ready to get my bake on.

In preparation of the upcoming holidays we've been having a little recipe bake off here at Root Farms and we'd like to include our fantastic customers.  Do you have a recipe for a cookie or a cake or a nut encrusted fish or chicken that you'd like to share with us?  We'd love to hear about it, and we'd LOVE to see pictures! Here's a little recipe to get you started, I made this last night for our company luncheon today and got compliments from everyone who had one and no left overs to take home for my belly (thank goodness!).  They're not your usual cookie and even when you tell people that they're "orange slice cookies" they don't understand what you mean until that first sweet, surprising bite.  YUM!  Thanks for the recipe Grandma!

Orange Slice Cookies

Original Recipe Yield 6 dozen

Ingredients

• 1 cup white sugar
• 1 cup packed brown sugar
• 1 cup shortening 
• 2 eggs
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups quick cooking oats
• 2 cups of Root Farms Orange Slice Candies, cut into small pieces.  Dip kitchen shears or a kitchen knife into hot water to make cutting easier.

Directions

1. In large mixing bowl, cream together sugars and shortening until fluffy. Add eggs and vanilla; beat well. Stir together the flour, baking powder, baking soda, and salt. Stir into creamed mixture.
2. Stir in the oats, and the orange candy. Using about one tablespoon of mixture for each cookie, roll into one inch balls. Place on greased cookie sheets.
3. Bake in a 350 degree F (175 degrees C) oven for 10 to 12 minutes or until lightly browned. Remove and cool on a wire rack.

It's been awhile since we've updated. Lots going on here!
We've been enjoying some sun in Arizona. Perfect weather to be out and about. We'll be down here till March sometime! Call us for specific locations! Yuma, Quartzsite and Fountain Hills.

Walnuts ... so very good for you

Walnuts Are Tops Among Nuts

Though all nuts are good for you, with a variety of health benefits, a recent research study extols the virtues of the walnut as top nut when it comes to healthful properties.

The scientists from the study say that walnuts have a combination of more healthful antioxidants and higher quality antioxidants than any other nut. In fact, they have about twice the antioxidants as other commonly consumed nuts.

“Walnuts rank above peanuts, almonds, pecans, pistachios and other nuts,” said Joe Vinson, Ph.D., who did the analysis. “A handful of walnuts contains almost twice as much antioxidants as an equivalent amount of any other commonly consumed nut.”

Unfortunately, people don’t eat many walnuts, but this study may help change that.

Nuts are one of nature’s most perfect foods. Inexpensive and convenient, they have plenty of high-quality protein, vitamins and minerals, dietary fiber and can be enjoyed by those on gluten and dairy free diets. Years of research on nuts have found that regular (preferably daily) consumption of nuts in small amounts (about 2 ounces or a small palm full) is associated with decreased risk of heart disease, certain kinds of cancer, gallstones, Type 2 diabetes, and other health problems.

This study, however, compared nine different types of nuts including walnuts, almonds, peanuts, pistachios, hazelnuts, Brazil nuts, cashews, macadamias, and pecans. Walnuts had the highest levels of antioxidants.

Vinson also found that the quality, or potency, of antioxidants present in walnuts was highest among the nuts. Antioxidants in walnuts were 2-15 times as potent as vitamin E, another powerful antioxidant.

The heat from roasting nuts generally reduces the quality of the antioxidants, so eating walnuts raw or unroasted helps to get the full effectiveness of the antioxidants.

If you are worried that nuts may be fatty or cause weight gain, consider this: nuts contain healthful polyunsaturated and monosaturated fats rather than artery-clogging saturated fat. Interestingly, studies continue to show that eating nuts does not cause weight gain, most likely because the protein and fiber is satiating with just a small amount so people feel full and eat less of them. In fact in a 2009 study, people who regularly ate nuts had significantly lower risk of weight gain and obesity. Still small portions are key: it only takes about seven walnuts a day to get the health benefits.
